Dingle Distillery Tour
In July a group of us hit Dingle for a tour. We took in the brewery, the distillery and the pubs. Dingle is such a fantastic town to visit. The people and craic are just mighty. We started off at Dingle Brewery, where we received a very warm welcome.
It was a self-guided tour, so we took a good look around. When we'd seen it all, we sat up at their beer bar and had a taste of the infamous Tom Crean's beer. It was gorgeous - very refreshing!
Lunch had to be eaten on the go, as we took the walk out of Dingle to the distillery. We've visited Dingle distillery several times and it never goes unnoticed how welcome Mary, Joe et al make you feel once you step inside their door. Unbelieveable! You are treated like family - in the best way, of course!
Dingle were one of the first craft whiskey distilleries of the modern era. When we visited, they had a single mash-tun and a number of fermenting vessels, all wooden.
Their three, pot shaped stills were custom designed by John McDougall. These are the stills, but this isn't John!
Dingle distillery have a deep community of Founding Fathers whos individual casks are being well cared for at the distillery.
They make different styles of whiskey including Pot Still and Single Malt and are innovative with their maturation. They currently have some spirit maturing in quarter casks!
After we had a good look around, we sat around the table with Joe Joyce, who was both entertaining and informative. Joe gave us some samples of the maturing spirit and boy was it gorgeous. While their initial Cask No.2 release is a little outside most budgets, we look forward to their next release. And of course, they make their own Vodka and Gin in their little pot still, called "Oisín".
The Atlantic sea air was refreshing on the walk back into town. We filed into John Benny's Pub for a feed before taking in the nightlife the pubs have to offer. For the whiskey lover, they have many, but Dick Mack's is something else. We were like kids in a sweet shop. What a selection of whiskeys and such great staff! The night was long, but memorable.

Dingle Single Malt Batch No. 6
Dingle Distillery is proud to launch its highly anticipated sixth and final release of its Single Malt Batch series – Dingle Single Malt Batch 6. Some 15,000 bottles of the liquid have been produced with an all-Port maturation and with an additional 1,000 Cask Strength bottles available.
The sixth release comprises of malt whiskey that has been matured exclusively in Tawny Port Casks.. This will be the first such release from Dingle. Bottled at 46.5% and non chill filtered. Fully matured exclusively in Tawny Port Casks, Batch 6 is a great of example of the interaction between Single Malt spirit and Fortified wine. A whiskey with multiple layers of sweetness and a well-balanced depth of flavour .

Dingle Distillery
The Dingle Whiskey Distillery was crafted and conceived by the three independent spirits behind the Porterhouse Brewing Company: Oliver Hughes; Liam LaHart and Peter Mosley.
Oliver Hughes, founder of the Porterhouse group of brewpubs had an immovable vision to bring distilling to Dingle. When he started socializing the idea to friends and Dingle locals, many thought he was out of his mind. There was no such thing as an artisan, independent distillery in Ireland at the time and demand for whiskey was not where it is today.
Yet Oliver persisted in his own inimitable way, winning over detractors and dubious along the way proving that not only could he make his dream a reality, it has turned out to be a very successful business.
Sadly, Oliver passed away before the first Dingle whiskey was ready for bottling but his son Elliot proudly carries on what his father began.
It describes itself as an ‘artisan’ distillery and was established in 2012. The distillery itself stands tall in a converted sawmill in Milltown on the outskirts of Dingle, County Kerry.
The first whiskey distilled in 2013 was a single malt which they matured at the distillery before releasing it in late 2016.
Each subsequent release of the single malt is incrementally more mature than the first. Every batch features a different Liam O’Neill painting on the bottle, with the current expression at Batch #4, aged in ex-bourbon, sherry and Port casks at 46.5% cask strength.
In addition to whiskey, the distillery also produces and markets the very popular Dingle vodka and Dingle Gin.
In 2017, Dingle Distillery became the first independent Irish distillery to release a single pot still whiskey since the formation of Irish Distillers in 1966.
The copper pot stills used at the distillery were designed by John McDougall and produce 2 casks of whiskey per day. They value quality over quantity and so the low volume allows them to ensure all aspects of production are carefully monitored.
Dingle as a town is most famous as the home of Fungi, Ireland’s only dolphin. It is a major attraction on the ring of Kerry where no visit is complete without a visit to Dick Mack’s pub, a fantastic local community gathering spot with a huge selection of Irish whiskey.

Dingle Original Gin
Dingle Original Gin is the product of a considerable amount of research, both technical and historical, and experimentation. Our aim was to create a totally unique gin, one which worked within the great tradition of gin distilling but which also came with a degree of innovation.
In terms of its broad style, this is what is categorised as a London dry gin but the unique character and flavour come from our painstaking and original choice of botanicals.
This combination of flavour elements are macerated in spirit for 24 hours. Then, when the spirit is distilled, it passes through a flavour basket in the neck of the still. This process underlines the attention to detail that is an essential part of our whole approach to the art of distillation.
We use, amongst other botanicals, rowan berry from the mountain ash trees, fuchsia, bog myrtle, hawthorn and heather for a taste of the Kerry landscape. It’s a formula unknown elsewhere and is calculated, amongst other things, to create the sense of place and provenance. The spirit is collected at 70% abv and then cut to 42.5% abv using the purest of water which we draw from our own well, 240 feet below the distillery.
Peter Mosley sums up DOG’s unique character in a few words: “The uniquely Irish botanicals give a fabulously fresh, floral character that perfectly balances the traditional juniper. But, to be honest, you really have to taste it for yourself.”
Dingle Original Gin is best served with large cubes of ice, a wedge of fresh orange and a sprinkling of juniper berries.

The series comprises six batches of single-malt whiskeys distilled in different strengths and distinct flavours, casks, and undertones. Definitely book a tour. This distillery makes whiskey, gin and vodka. They are very well known for their Gin, which is gotten a lot of publicity recently since winning some great awards, such as the World Drinks Award's Worlds Best Gin 2019. The tour lasted an hour and cost about €15 a person.

The Dingle distillery is a great place to learn about the distilling of whiskey and other spirits (gin and vodka). Our guide was Murren, and she was very knowledgeable about the process and very passionate about the products produced by the distillery. We were treated to a drink of our choice at the end of the tour.
