I’m trying to decide if we should get a balcony cabin on the right (starboard side) or left  (port side).   Does the ship sail close enough to the shore line that you can see land as you’re sailing or just when you get into the port?    Which side do you think is better?

You will not be sailing that close to land - choose more or less sun if that matters to you.  On these itineraries we are so busy that the cabin is less important to us - pooped after a long day so to bed pretty early.

I kinda prefer the starboard side for the simple reason I like to watch them docking the ship and seeing the city.  In more cases than not, ships dock on this side but.....it's not 100% of the time.

We always book port side mid ship or towards the stern for a number of reasons, one of which is trying to figure out  how to navigate the ship and which way is forward.  Can't predict which side of the ship will be toward the port each day, but port side has always been good for us.
